Apple Meringue Pie

Ingredients

CRUST:

1 1/2 C Almond flour
1/3 C Butter, melted
3 T Splenda


FILLING:
1 C Grated peeled zucchini
1 C Grated apple
1/2 C Splenda
3 T Butter
1 T Lemon juice
3 Eggs,separated
1/4 t Xanthan gum
1/2 t Cinnamon
1/2 t Nutmeg
1/4 C Splenda
1 t Vanilla extract

Directions

CRUST:



Heat oven to 350 F. Mix all crust ingredients. Press mixture firmly against bottom and side of 9 inch pie plate . Bake about 10 minutes or until light brown; cool.



PIE:



Spread apples and zucchini evenly in bottom of pie shell.



In separate bowl, cream splenda and butter. Blend in lemon juice, xanthan gum, and 3 beaten egg yolks. Pour over ple crust. Sprinkle with cinnamon and nutmeg.



Bake in 350 degree oven for 40 to 45 minutes.



Beat egg whites until peaks are formed. Gradually,add splenda and vanilla, beating until meringue is stiff. Spread over top of pie.



Return to oven. Reduce heat to 325 degrees. Bake 5 to 10 minutes longer, until meringue is lightly browned.
