Down Home Egg Casserole

Ingredients

10 Eggs lightly beaten
1/3 C Almond flour
3/4 t Baking powder
10 oz Lean pork breakfast sausage, fried and crumbled

1 4 oz Can mushrooms, drained
1/2 lb Monterey Jack cheese grated
1 1/2 C Cottage cheese

Directions

Preheat the oven to 375 F.



Mix the eggs, almond flour and baking powder together well.



Add the sausage, cheese, cottage cheese and mushrooms to the egg mixture and beat well.



Pour into a greased 13x9 glass baking dish.



Bake for 30-35 minutes.
