Fried Green Tomatoes with Bacon Ranch Dip

Ingredients

2 Medium tomatoes
1 Egg yolk beaten and 1 t water
1/4 C Atkins corn muffin mix
1/4 C Almond flour

1/4 t Salt
1/8 t Pepper
1/4 t Onion powder
1/4 t Oregano
1/4 t Dill weed
Oil for frying

Directions

Slice tomatoes thin (1/4 inch) and place on paper towel to absorb moisture.



Mix corn muffin mix, almond flour and seasonings.



Dip tomatoe slices in egg mixture, then corn muffin mixture.



Heat oil until hot and fry until lightly brown, then turn and fry on other side. Place on paper towel to absorb excess grease. Garnish with grated parmesan cheese.



Serve with the following sauce.

Bacon Ranch Dip:



1 C Ranch Dressing

1/2 C Sour Cream

1/4 C Grated Parmesan Cheese

1 pkg (2.8 oz.) OSCAR MAYER Real Bacon Recipe Pieces

1 green onions, sliced



MIX all ingredients in bowl; cover.



Refrigerate several hours or until chilled.



Serve with fried green tomatoes.
