Amish Pumpkin Pancakes

Ingredients

1 C Almond flour
Pinch of baking soda
2 T Splenda
1/2 t Cinnamon
1/8 t Ginger
1/4 t Nutmeg

1 Egg, well-beaten
1 1/4 C Heavy cream
2 T Melted butter
1/2 C Canned pumpkin (not pumpkin pie mix)

Directions

Combine almond flour, baking soda, splenda, and spices.



Combine egg, butter, pumpkin and cream; add to almond flour mixture, mixing just until smooth. Bake on hot, lightly greased griddle, turning only once.
