Pumpkin Fritters

Ingredients

1 Egg
1/2 C Splenda
1/2 t Salt
1 1/2 C Canned pumpkin
1 C Almond flour
1/4 t Baking powder
1/4 t Baking soda
2 t Pumpkin pie spice
1/2 t Ground ginger
1 T Melted butter
1 t Vanilla extract
Splenda for dusting

Directions

Beat egg, aplenda and salt until light and fluffy. Blend in pumpkin.



Sift almond flour, baking powder and baking soda together.



Beat into egg mixture. Add spices, butter and vanilla extract. Mix well.



Drop by tablespoonsful onto well greased, hot griddle or fry in deep, hot fat a tablespoon at a time.



Watch carefully as these scorch easily. Sprinkle with splenda when first taken out of hot oil and drained.



These taste best served warm.
