Rio Grande Turkey loaf

Ingredients

2 Eggs, beaten
3/4 C Crushed pork rind crumbs
1 Packet Ranch dressing mix
3 T Salsa

2 T Ranch salad dressing
1 t Chili powder
1/2 t Ground cumin
2 lbs Ground Turkey
1 C Shredded Pepper Jack cheese

Directions

Preheat the oven to 350 degrees F.



In a large bowl, mix together the eggs, pack of ranch dressing mix, pork rind crumbs, salsa, salad dressing, chili powder, and cumin. Add turkey and mix gently but thoroughly. Shape into loaf on slotted baking pan or broiler pan.



Bake at 350 degrees F for 1 hour, until internal temperature registers 175 degrees F.



Top with cheese and let stand for 10 minutes. Slice and serve with sour cream and more salsa.
