Cheddar Crusted Broccoli Soup

Ingredients

6 T Butter, divided use
2 lbs Broccoli, chopped into bite-size pieces, stems reserved
1 Onion, chopped
2 Cloves garlic, chopped

1 t Salt
1/2 t Dried thyme
6 1/2 C Chicken broth
1 C Heavy cream
2 C Shredded cheddar cheese
7 t Xanthan gum

Directions

Melt half the butter in a medium-sized, heavy-bottomed pot over medium-high heat.



Add broccoli stems and onion; saut
