Sonoran Beef Stew

Ingredients

2 lbs Round steak, cut in 1-inch cubes, or lean stew beef
1 Onion, chopped
2 Cloves garlic, minced
2 T Butter
6 Green chile peppers, seeded, chopped (a mixture, mild, hot, your choice)

1/2 t Dried oregano
1/2 t Ground cumin
1 C Crushed tomatillos
1/2 C Beef broth
Chopped fresh cilantro for garnish
1 t Xanthan gum

Directions

Brown the beef with onion and garlic in butter.



Combine mixture in slow cooker with chile peppers, oregano, cumin, and tomatillos, and 1/2 cup broth.



Cover and cook on low 6 to 8 hours.



Add the xanthan gum a little at a time until thickened.



Garnish with fresh cilantro and serve with warm low carb tortillas.
