Creamy Beef Galette

Ingredients

1 lb Ground beef
1 Onion, chopped
8 ozs Cream cheese
1 Can (4 oz) Mushrooms

1 1/2 C Mixed vegetables of choice - frozen
1 T Tomatoe puree
2 C Low carb bake mix
1/2 C Boiling water
1/2 C Cheddar cheese

Directions

Move oven rack to lowest position and heat oven to 375F degrees. Spray 12 inch pizza pan with cooking spray.



In skillet cook beef and onion until brown, drain.



Melt cream cheese in microwave a little at a time until melted. Stir in mushrooms.



Stir vegetables, tomatoe puree, and cream cheese mixture into the beef mixture. and cook until heated through.



In bowl, stir bake mix and boiling water until soft dough forms. Place dough on surface sprinkled with bake mix; gently roll in bake mix to coat dough. Shape into a ball, knead about 5 times until smooth. Roll dough into 14 inch circle and place on pizza pan.



Spoon beef mixture over dough to within 2 inches of edge. Fold edge of dough over beef mixture. Bake 24 to 27 minutes until crust is golden brown. Top with cheese. Bake 3 to 4 minutes longer until cheese is melted. Let stand 5 minutes before cutting.
