Goat Cheese Popovers

Ingredients

3 Large eggs
3/4 Cup Almond flour
1/2 t Salt
1/4 t Ground black pepper

Pinch ground nutmeg
1 1/4 C Heavy cream
2 ozs Soft goat cheese with herbs

Directions

Preheat oven to 400F degrees.



With pastry brush, gently brush bottoms and sides of 12 muffin cups with oil.



Place cups in oven while it is pre-heating.



In blender, place eggs, almond flour, salt, pepper and nutmeg. Pulse until just blended. Then, with blender at low speed, with center part of cover off, slowly pour in cream and blend until just smooth, scraping down the sides.



Remove pan from oven, place 1 tablespoonful of the batter in bottom of cup.



Slice cheese into 12 sections, and place one slice into each cup. Top with remaining batter.



Bake popovers for approx. 30 to 35 min. until brown, remove from pan, and serve hot.
