General Tsos Chicken

Ingredients

2/3 C Hot chicken broth
1/3 C Splenda
1/4 C Soy sauce
1/4 C Sherry
2 T White vinegar
1 t Minced garlic
1 t Minced ginger
1/4 ro 1/2 t Xanthan gum
2 lbs Boned, skinned chicken thighs - cubed
2 T Soy sauce
1/2 t White pepper
1 Egg - beaten
1/2 C Atkins corn muffin mix (unprepared)
1/2 C Vegetable oil
1 t Sesame OR peanut oil
1 C Diced scallions
2 C Broccoli, steamed until tender
2-6 small Dried chili pepper - chopped

Directions

Combine broth, splenda, xanthan gum, 1/4 cup soy sauce, sherry, vinegar, garlic, and ginger; refrigerate until needed.



Mix together chicken, 2 T soy sauce, white pepper, and egg.



Stir in Atkins corn muffin mix until chicken is coated evenly.



Stir in 1/2 cup vegetable oil to separate chicken pieces.



Deep-fry chicken in 360 degree oil until crispy.



Drain chicken on brown paper bags.



Place 1 tsp. oil in wok and heat until wok is hot.



Add scallions and peppers and stir-fry briefly. Add broccoli until heated.



Pour refrigerated mixture and chicken into wok.



Simmer and stir until sauce is thick.
