Ingredients

SALAD:

1 Bag spring salad mix
1 C Sliced black olives
1 C Diced ripe avocado
1 C Diced Hard boiled egg
1 C Bleu cheese, crumbled
2 C Cooked, diced chicken breast
1 C Cooked, chopped crispy bacon
1 C Chopped tomatoe
1 C Chopped cucumber
DRESSING:

1 C Crumbled blue cheese
3 ozs Cream cheese, softened
1/2 C Mayonnaise
1/3 C Half-and-half

Directions

DRESSING:



Reserve 1/3 cup of the blue cheese; beat remaining blue cheese and cream cheese on low until blended. Add mayonnaise and half-and-half; beat on medium speed until creamy. Stir in remaining blue cheese. Cover and refrigerate for at least 3 hours.



SALAD:



Place spring mix in a bowl and arrange remaining ingredients in rows on top.



Serve with bleu cheese dressing on the side.
