Tuscan Guacamole

Ingredients

2 Large avocados, about 1 pound
4 Garlic cloves, crushed
1/2 T White wine vinegar
3 T Shredded fresh basil leaves or 1 teaspoon dried

6 T Grated Parmesan cheese
4 T Chopped sun-dried tomato (packed in oil, drained)
4 T Toasted pine nuts
1/2 t salt

Directions

Coarsely mash (DO NOT PUREE) avocados; stir in vinegar.



Fold in remaining ingredients.



Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.
