Ingredients

DRESSING:

2 T ginger, minced
1/4 C rice wine sweetened with 1 t splenda
1 T Splenda
1/4 t sea salt
3 T Unsweetened peanut butter
1/4 t cayenne pepper
2 T soy sauce
2 T rice vinegar
1 t sesame oil
SALAD:

1/4 Red onion, thinly sliced
3 Chicken breasts, cooked, sliced
1 Cucumber, peeled and cut into matchsticks
1 Red bell pepper, cut into sticks
1 C Bean sprouts
2 C Red cabbage, coarsely chopped
4 T Cilantro, chopped
1/2 C Roasted peanuts, chopped
To taste Soy sauce, optional

Directions

DRESSING:



Combine all dressing ingredients in a small pan and whisk over low heat until smooth. Set aside and chill.



SALAD:



In small bowl, combine onion and peanut ginger dressing and soy sauce (optional).



Cut the chicken meat into long, thin strips and place in salad bowl. Add the cucumber, bell pepper, bean sprouts, and cabbage. Pour the dressing over the salad and toss well. Sprinkle with the cilantro and peanuts and serve.
