keys-style citrus chicken

Ingredients

1 T butter
4 skinlees boneless chicken breast halves (about 1/4 lb total)
2-3 cloves garlic peeled &thinly sliced
1 tsp finely shreddded lime peel
2 T lime juice (approx 2 limes)
1/4 tsp ground ginger
1/8 tsp crushed red pepper
1 orange

Directions

Put chicken pieces in ziplock bag and pound thin @1/4 in. set aside. Mix in a small bowl-lime peel, lime juice, ginger and red pepper- set aside. Peel orange, slice in half, and then cut crosswise into slices, reserving any juice. Heat butter in large skillet over med/high heat. Add chicken and garlic. Cook until chicken is no longer pink, turning once, around 3-4 min per side. Stir garlic occasionally. When chicken is cooked, add lime mixture and any orange juice to skillet. Place orange slices on top of chicken, cover and cook for 1-2 minutes until heated through. Serve any reserve drippings over chicken.
