Almost Tamales

Ingredients

"Tortillas (almost)"
6 eggs
1/2 c crushed pork rinds
6 tsp cream
2 tsp protein powder or Atkin',s bake mix
Meat Filling:
1 lb Ground beef
1/2 tsp salt
2 tsp finely chopped onion
1/4 tsp ground cumin
1 tbsp salsa
Topping:
2 c shredded cheddar cheese
1/2 c sour cream
1/4 c salsa

Directions

Mix eggs, cream, pork rinds and protein powder together. In a non-stick pan melt a little butter. Spoon in enough mixture to cover that when spread out it will cover bottom of pan. This mixture should make about 6 "tortillas". Brown on the bottom and flip over with spatula. Set aside.

Brown hamburger in pan and add salt, cumin, onion, and salsa. Use spatula to chop it up fine. Cool slightly.

Take one of your tortillas and put even portions of meat mixture on all of them. Roll up and place in baking dish. Mix cheese, sour cream and salsa together and pour over tamales in the pan. You can sprinkle with more cheddar cheese if desired.

This is a little bit of work, but the flavor is wonderful. You can also substitute the cumin for ground nutmeg and swiss cheese for the cheddar and omit all the salsa for a german dish. The pork rinds help keep the "tortillas" from falling apart and help give the texture of corn tortillas.
