Atkins Cauliflower Mock Potatoe Salad

Ingredients

1 med. head of Cauliflower(broken into small florets)
1/2 cup mayonnaise
2 tbls. lemon juice
2 packet sugar substitute
1/2 tsp. dried mustard
3 green onions
1 finely chopped jalapeno pepper or 2 tbls. chopped green bell pepper (optional)
salt and pepper

Directions

Cook cauliflower in a large pet of boiling water 10 mins. or until tender. Drain and rinse under cold water; pat dry.



In a large mixing bowl, mix mayonnaise, lemon juice, sugar substitute and mustard. Add cauliflower, green onions and pepper, if using. Mix well until vegetables are evenly coated with dressing. Add salt and pepper to taste. Chill 30 minutes for flavors to blend.

Additional Information

I found this in Dr. Atkins New Diet Revolution book. I made it to take to a BBQ so that I could have something besides meat. Everyone there ate it and wanted more. I had to write the recipe down 4 times! If you are following Atkins, this is only 2 digestable carbos.
