Watercress and walnut salad with poppy seed dressing

Ingredients

2 large bunches watercress, trimmed
2/3 cup walnuts, toasted, chopped
Dressing:
3 tbsp apple cider vinegar
2 tsp Dijon mustard
1 tbsp maple sugar free syrup
1/4 cup canola oil
1/2 tsp poppy seeds

Directions

Whisk dressing ingredients in a small bowl to blend. Season dressing to taste with salt and pepper.



Toss watercress and walnuts in large bowl with enough dressing to coat. Season with salt and pepper.

Additional Information

Toasted walnuts add crunch and flavor to this terrific salad.
