Greens with Turkey, Apples and Walnuts

Ingredients

3 Tbsp walnuts, pieces
8 cups red leaf lettuce, torn into small pieces
1 apple, chopped (any sweet variety)
6 ounces turkey breast, cut into 1-inch pieces
2 Tbsp red onion, chopped fine

Dressing:
1/4 cup cider vinegar
2 Tbsp olive oil
1 clove minced garlic
1/2 tsp curry powder
1/4 tsp salt
Freshly ground black pepper

Directions

Prepare dressing: In a jar or small bowl, mix together vinegar, oil, garlic, curry powder, salt and pepper.



Combine greens, apple, turkey and red onion. Toss gently with curry dressing. Put salad onto plates and sprinkle with walnuts.

This is a great way to use the left over turkey. The curry is a matter of taste. You could also use tuna or even smoked deli turkey.
