Ingredients

3 pounds boneless, skinless chicken breasts
garlic powder
salt
pepper
2 - 10 ounce packages frozen chopped spinach
2 tbsp olive or other oil for sauteeing

8 ounces mushrooms, sliced
1 small onion, finely chopped
1/3 cup heavy cream
8 ounces mozzarella cheese, sliced thin

Directions

Place chicken breasts in 2 large baking dishes. Sprinkle with garlic powder, salt, and pepper. Bake uncovered at 350 degrees for 25-40 minutes (defrosted breasts take about 25 minutes, frozen breasts take 40 minutes).



While chicken is baking, place frozen spinach in skillet, and heat until spinach is warm and most of water has evaporated. Add oil, mushrooms, and onions. Check chicken for doneness. When chicken is cooked through, add heavy cream to spinach mixture. Spoon spinach mixture over chicken, layer with cheese slices, and bake for an additional 10 minutes.

Additional Information

This is very simple and quick to prepare. All of the chopping and sauteeing can be done while the chicken bakes.
