Amaretto Mousse

Ingredients

1 pint Whipping cream
1 tbsp knox Gelatin
3 tbsp Amaretto
4 Eggs, separated
3 tbsp splenda
1/2 tsp vanilla extract
1/2 tsp almond extract
1 c Sliced, toasted almonds

Directions

Whip the heavy cream. Place in the refrigerator until ready to use.

Dissolve the gelatin powder in Amaretto in a dish and microwave for about 30 seconds or until hot. (You could use a double boiler) Set aside. Combine the egg whites only and the splenda. Whisk until it reaches firm peaks. Add the egg yolks to the gelatin and mix well. Fold the gelatin mixture into the egg whites. Return to microwave (or double boiler). Heat for 30 seconds and then whip again. Heat an additional 30 seconds, whip and then fold in the whipped cream and add vanilla and almond extract. (If you do use a double boiler you would just continue to whip the mixture while it heated through). Fill dessert glasses and place in the refrigerator until firm (approximately 1 hour).

Garnish with sliced, toasted almonds.

A very light dessert. I can't stress enough about how much you have to whip this dish to get the "mousse" consistancy. Otherwise you have amaretto eggnog. :)
