Ingredients

6 - 7 eggs
1 tube sausage or cut up ham, even crumbled bacon works!
1 small pkg thawed/drained spinach or broccoli
1/4 - 1/2 c. onions (I microwave them until soft)
Cheese to taste (a cup or so)

Directions

Precook meat & onion - in a large bowl, beat eggs, add spinach, meat, onions, & cheese. Pour in a deep glass pie plate sprayed well with PAM. Bake at 350 for 30 minutes or until center does not look raw.

Additional Information

You can add any ingredients you like. Peppers, chiles, different cheeses. Let stand for a couple minutes before cutting to serve. This dish also freezes and reheats very well.

This is so good I make two of them on Christmas morning and in one of them I put precooked hashbrowns in it for those who prefer the carbs.
