Fake potato pancakes

Ingredients

1/2 head of cauliflower
1 egg
Oil for frying
Salt & Pepper

Directions

cook cauliflower until nearly tender. Let drain.

Mash it to the consistency of mashed potatoes.

Add egg and salt and pepper to taste. Mix well.

Heat oil in a frying pan. Spoon mixture into several small round pancakes at a time

flatten it out a bit so that it will cook evenly.



Fry them about 2-3 mins on each side. The trick is not trying to turn

them too quickly because they break up. If you let them cook well until they are golden brown, they'll

flip easier.
