Stuffed Baby Bellas

Ingredients

16 Baby portabella mushrooms

1/2 C diced sweet onion

2 t Butter
1 lb Sugar free bacon, cooked and crumbled

1 C Finely shredded swiss cheese

Directions

Spray 8" square baking dish with oil spray. Pre-heat oven to 350F.



Gently rinse mushrooms and dry with paper towel. Remove and discard stems, lay the caps upside-down in baking dish.



Cook bacon until crispy. Cool. Crumble into bacon bits and set aside.



Melt butter in a small skillet. Add onions and saute until translucent and just beginning to brown. Remove from heat and add bacon bits. Let mixture cool completely. Add shredded swiss cheese and combine all ingredients.



Fill each mushroom cap with mixture, gently pressing mixture into the cap and dividing the mixture evenly among the mushrooms.



Bake 12 minutes. Then turn on the broiler and broil the mushrooms for 2 - 3 minutes, until the tops are bubbly. Serve warm.
