Tex-Mex Turkey Salad

Ingredients

TEX-MEX MAYO:

1/4 C Mayo

1/2 t Chili powder

1/4 t Ground cumin

1 t Lime juice

1/2 t Salt, to taste

1 T Fresh, chopped cilantro
SALAD INGREDIENTS:

2 C Cooked turkey, cut into 1/2" cubes

1/2 Medium avocado, cubed

1 Ripe tomatoe, seeded and diced

2 T Red onion, diced

Directions

In a small bowl, mix together all mayo ingredients. Refrigerate until you are ready to serve the salad.



Combine salad ingredients in a medium bowl.



Pour the mayo mixture over the salad mixture and gently stir to coat with the mayo. Refrigerate salad until well-chilled.

Serve the salad in hollowed out tomatoes or avocado halves. You can also wrap in large lettuce leaves.



Sprinkle with chopped black olives and some red and green chopped peppers for a burst of color.
