Endive Salad with Bacon Dressing

Ingredients

8 slices bacon
2 eggs - beaten
2 tsp. salt
3 pkgs sweetener (to taste)
1/4 cup vinegar
1 cup water

2 hard boiled eggs
1 head endive
fresh ground pepper

Directions

Tear apart endive. Wash and dry. Place in a large serving bowl. Slice hard boiled eggs; Lay egg slices over top of the endive. Set aside. Fry bacon until crisp, then break or cut into bits. Set aside. Mix the 2 beaten eggs, vinegar and salt together in a saucepan. Whisk and cook over medium heat until slightly thickened. Stir in bacon bits. Serve warm over endive. Sprinkle with pepper.

The endive will wilt slightly but it's slightly bitter taste is wonderful with this dressing. I found that it goes well with pork, but can be served on it's own.
