Celery Parmigiana

Ingredients

6 slices bacon
4 cups sliced celery
1/4 c chopped onion
1 clove garlic, minced
1 cup water
1 tsp salt
2 small (romano) tomatoes peeled and chopped
1 cup grated Parmesan cheese

Directions

Fry bacon in skillet until crisp. Drain, crumble and set aside. Pour fat from skillet. Add celery, onion, garlic, water and salt. Cover. Simmer 20 minutes or until celery is tender. Drain. Place in 1-1/2 quart casserole. Top with crumbled bacon and chopped tomatoes. Sprinkle with Parmesan. Bake at 350 degrees for 15-20 min.

Additional Information

You could use canned tomatoes, just drain them really well and the baking time might be longer.

This makes a very nice dish. If served as a side dish it makes enough for 4 people. You could use it as the main dish by adding mozarella cheese too and serve it like lasagna for 2 people. I've reduced the carb count by the amount of fiber in the celery and tomatoes.
