Low-Carb Spice Muffins

Ingredients

6 T. melted butter
3 large eggs
1/2 cup kefir or plain yogurt
1/2 cup Splenda
1 T. maple flavoring
1 T. vanilla
2 t. cinnamon
1 t. nutmeg
1/2 rounded t. baking soda
1 rounded t. baking powder
1 cup ground flaxseeds
1/4 cup soy flour (or bake mix)

Directions

Beat together melted butter, eggs, and kefir or yogurt. Add Spenda, maple flavoring, and vanilla.



In a separate bowl, mix dry ingredients together and add to batter. Stir until thoroughly moistened. Spoon into 12 muffin cups (sprayed with baking spray, or use paper liners) and bake 15-20 minutes at 375 degrees.

Additional Information

Can be baked in microwave if you wish. They freeze well, and taste great with cream cheese.
