Crustless Cheesy bacon broccoli pie

Ingredients

1/2 lb Bacon
1/2 Red onion, chopped
6 Eggs
20 ozs Frozen chopped broccoli, thawed, drained well
3/4 C Heavy cream
1/2 lb Gruyere cheese - grated
1/2 t Salt
1/4 t Cayenne pepper
Parsley sprig (optional)

Directions

Preheat oven to 350F. Butter a 10" quiche dish.



In a large skillet cook bacon until crisp. Remove and place on plate lined with paper towel; coarsely chop bacon.



Drain all but 1 T drippings from pan. Heat over medium heat. Cook onion until tender, 8 - 10 minutes.



In a large bowl combine eggs, cream, broccoli, cheese, salt, cayenne pepper, bacon, and onion.



Add mixture to prepared pan.



Bake until knife inserted in center comes out clean, shielding with aluminum foil, if necessary.



Bake about 1 hour, 15 minutes.



Let cool 5 minutes before cutting.



Garnish with parsley sprig, if desired.
