Cheddar bacon wrapped chicken

Ingredients

2 Large boneless/skinless chicken breasts
6 ozs Colby-jack cheese, grated
1 lb Bacon
1 Medium jalapeno pepper, cleaned and sliced
Italian dressing

Directions

Clean and wash chicken.



Cut a pocket into each chicken breast.



Stuff 3 ozs cheese into each chicken breast. Then top the cheese with about 3 slices of the jalapeno pepper.



Wrap each chicken breast completely in slices of bacon.



Secure the chicken breast closed with toothpicks.



Marinte in the italian dressing for one hour.



Grill the chicken breast until completely done, and juices run clear.

This is so good, smoky bacon, melted cheese, mmmmmmmm!

Serve with dollops of sour cream and pico de gallo.



Make a salad out of greens with avocado slices, red onion, colby-jack cheese and dices jalapeno, serve with home made lime vinegarette dressing drizzled over the top.
