Ingredients

2 Cups of Chicken Broth or Vegatable Broth
1 Egg
2 Tablespoons of grated Parmesan Cheese
2 Tablespoons of chopped Fresh Parsley

Directions

1.In a saucepan, bring broth to a boil.



2.Meanwhile, in a bowl, beat the egg till frothy. Stir in Cheese and Parsley.



3. Pour the egg mixture into the borth and stir gently with a spoon until the egg sets. Ladle into a bowl and serve at once.

Additional Information

This was really good with a slice of low carb herb bread that I toasted and cut up into croutons. Did the trick for a little something on a really cold day.
