Creamy Dill Mock Potatoe Salad

Ingredients

2 1/2 lbs Cauliflower (fresh)or Daikon radishes cut into bite sized pieces

8 ozs Real Mayonnaise

8 ozs Sour cream

2 Green peppers, chopped fine

1 1/2 Large Onions, chopped fine

4 Stalks celery, chopped fine

Paprika, to sprinkle top with


2 T Dill weed (dried)

Salt, to taste

Pepper, to taste

6 Eggs, hard boiled, sliced

1/2 C Heavy cream

Directions

Cook caulifloweror daikon in water with about 1/2 C of cream added to it until just tender. Do not overcook.



Let cauliflower or daikon cool completely.



In a large bowl gently combine cooled cauliflower/daikon, peppers, onions, and celery.



Combine mayo and sour cream together until blended well, adding in salt, pepper, dill weed.



Add mayo mix to cauliflower/vegetable mixture, gently combining ingredients thoroughly.



Top with sliced hard boiled eggs. Sprinkle with paprika for color.



Chill at least 6 hours or overnight.




Additional Information

This makes a very large batch and can be halved for a smaller amount.
