chicken tortilla soup

Ingredients

One Baked Chicken, boned
Reserve broth from chicken
2 cans chicken broth(additional)
1 14.5 oz can Tomatoes and Green Chilies (Rotel)
Small Onion chopped
2 cloves garlic
chili powder to taste
Fresh parsley and salt and pepper to taste.

Directions

Bring all your chicken broth to a boil with the onion and garlic. Cook 20 minutes or until onion is done. Puree in a blender. Add about half of chicken(chopped) and parsley and let simmer for 10 minutes. (Use the rest of the chicken later)

Additional Information

I sometimes add a can of washed black beans or some taco meat. If you like to hotter, add another can of Rotel or some fresh peppers. You will need to adjust carbs.
