Ingredients

1 cup Atkins Bake Mix
1 tbsp olive oil
1 tbsp water

2 eggs
1/4 tsp salt

Directions

Put all ingredients into food processor. Turn on and off until mixture has formed a ball. Remove mix to a floured suface. Roll into a thin rectangle. Cut into strips. You could run these through a pasta machine to thin them even more. Separate the strips and let them to dry. (A hairdryer helps.) Let dry for at least a few hours.

IMPORTANT: This pasta does not have to cook very long. Check after boiling for a minute or two.
