Rotisserie Chicken Salad

Ingredients

1 Rotisserie Chicken
4 stalks of celery, diced
Mayonnaise
1 Splenda packet
Dash of salt and pepper

Directions

Remove chicken from the bone and shred into small pieces, discarding the skin. Mix in celery and enough mayonaise to coat everything nicely. Blend in Splenda packet and salt and pepper to taste. Refrigerate overnight for best flavor.

Additional Information

This is so easy, I feel like it's not even a recipe. If you use no carb Mayonaise (I like Kraft Real Mayo - 0 crabs, 0 sugars), the only carbs are from the celery and Splenda.
