Warm Spinach Parmesan Dip

Ingredients

2 Tablespoons of butter
2 Tablespoons of olive oil
1 medium onion finely chopped
8 cloves of garlic,minced
2 Tablespoons of soy flour, or Atkins bake mix
1/2 Cup of chicken stock


1/2 Cup of whipping cream
10 oz package of fresh baby spinach leaves
1 Cup Grated Parmesan cheese
1/3 Cup Sour Cream
1/2 teaspoon Cayenne powder
salt and pepper to taste

Directions

Melt butter with oil in large heavy skillet over medium heat. Add onion and garlic; saut

Makes 3 Cups

Serve with assorted different crudites or low carb crackers or chips. For non Low Carbers, dip can be placed into a hollowed out round bread that has been toasted before filling.
