Radish Hot and Sour Soup

Ingredients

5 Cups of chicken stock
1/4 Cup of rice vinegar
1 Packet of Splenda
1/4 teaspoon of Cayenne pepper
1/4 teaspoon of ground dried ginger
1 lb of raw shrimp, peeled and deveined
1 1/2 Cup of sliced radishes
1 1/2 Cups of spinach leaves, shredded
2/3 cup of thinly sliced green onions

Directions

In a large saucepan over medium heat, bring stock to a boil. Stir in vinegar, splenda, cayenne and ginger. Add shrimp and cook until shrimp turn pink and curl, about 3-4 minutes. Turn off heat, stir in radishes, spinach and green onions. Cover and let stand 2-3 minutes before serving
