Chocolate Cream Puffs w/ Strawberry Truffle Filling

Ingredients

Puffs:

3/4 C Butter

2 C Boiling water

1/3 C Unsweetened cocoa

1 1/3 C Atkins Bake mix

2 T Granular Splenda

1/2 t Salt

8 Eggs

Filling:

2 Low carb dark chocolate bars, I used Pure Delite brand, I believe they are 5 ozs each.

1/2 C DaVincci or Atkins Strawberry syrup

2 8oz Packages cream cheese, softened

1 8 oz Tub Extra Creamy Cool whip

Fresh Strawberries for decoration


Directions

Puffs:



Grease baking sheet and pre-heat oven to 400 degrees F.



In a medium saucepan, melt butter in the boiling water. Add Atkins bake mix, cocoa, sweetner adn salt while stirring vigorously. Cook until mixture forms a ball that won't separate. Remove from heat and cool for 10 minutes.



Add eggs one at a time, beating thoroughly after each addition until smooth. Drop about 1/4 cup batter for each puff on the greased baking sheet. Space puffs about 3 inches apart.



Bake for 25 - 30 minutes.



FILLING:



Melt chocolate bars in the top of a double boiler.



In a separaate bowl, beat cream cheese and strawberry syrup until smooth. Beat in the melted chocolate then stir in the whipped topping.



When puffs have been removed from the oven, allow them to cool for a few minutes, then split them in half and remove any soft dough inside. Cool completely.



Fill with the cream cheese mixture and garnish with fresh strawberries.

Additional Information

Before serving, puree a little strawberries and place into a squeeze bottle, decorate the plate with drizzle designs, place filled puff on plate garnish with additional whipped topping and fresh strawberries.
