White Cheddar New Orleans Turnip Casserole

Ingredients

1 1/2 lbs Turnips, peeled and thinly sliced

2 T Butter

1 Onion, thinly sliced

2/3 C Chopped green pepper

1/3 C Chopped celery


2 T Atkins Bake mix

1 1/4 C Heavy cream

1 C Grated white cheddar cheese

Salt and pepper to taste

3 T Crushed pork rinds

Directions

Cook turnips in boiling, salted water to cover.



When just tender, set aside.



Saute onion, green pepper, and celery in butter until tender.



Sprinkle with Atkins bake mix and cook 1 or 2 minutes.



Add Cream and stir until blended and thickened.



Stir in cheese, salt, and pepper.



Combine cheese sauce with turnips.



Put all in baking dish.



Top with the pork rind crumbs.



Broil until crumbs and top are golden brown.
