Portabella Mushroom Tartar

Ingredients

1 lb Portabella mushrooms

1 1/2 T Extra virgin olive oil

1 T Finely minced shallot

1 T Roasted garlic


1/2 t Fresh chives

1/2 t Fresh tarragon

1 1/2 t Balsamic vinegar

Salt and pepper to taste

1 Bag Arugula

1 Bag Romaine

Directions

On a rack in a broiler pan place mushroom caps, rounded side down.



Drizzle with a small amount of olive oil.



Sprinkle with salt and pepper.



Broil 4 - 6 inches from the heat until mushrooms are tender (about 8 minutes).



Reserve any juices. Cool mushrooms completely and chop them finely.



Combine mushrooms with shallots, garlic, chives, tarragon, vinegar, reserved mushroom juice, olive oil and salt and pepper.



Cover and refrigerate until cold.



Serve over arugula/romaine leaves.
