Raspberry Heaven Salad

Ingredients

SALAD:

1 Large bag baby spinach

3/4 C Crumbled bleu cheese

3/4 C Pecan halves, fried lightly in olive oil

1 C Raspberries, cleaned and washed


DRESSING:

1/2 C Fresh raspberries

1/2 C Raspberry vinegar

1/2 C Splenda

1 C Olive oil


Directions

Wash, drain and tear spinach into bite sized pieces, making sure you get the stems out of the leaves.



Top with remaining ingredients and serve with raspberry dressing.



DRESSING:



Place raspberries, vinegar, and splenda into the food processor. Turn on and slowly add olive oil. The dressing will be slightly thick.



Serve over salad.
