Cracked black pepper fennel goat cheese salad

Ingredients

2 Fennel bulbs

1/2 C Black Olives

2 Tomatoes

1 Bell pepper (roasted & peeled)

2 ozs Goat cheese


4 T Red Wine vinegar

1/2 t Salt

1/2 C Extra virgin olive oil

1/4 C Minced fresh flat leaf parsley

2 t Freshly cracked black pepper

Directions

Remove any tough or discolored leaves from the fennel bulbs adn discard them, as well as the stalks and feathery tops.



Remove the tough core portion, slice the fennel bulbs in half lengthwise, and then slice each half crosswise into paper thin slices. You should have four cups of fennel. Set aside. Using a sharp knife, slice the goat cheese thinly.



In a small bowl, stir together the vinegar, salt, and olive oil to form a vinegarette. Stir in the parsley. Put the fennel in a bowl, add the vinegarette, and toss to coat. Let stand 45 minutes to an hour so the flavors can develop. Mound the fennel on a serving platter or on individual salad plates, arranging remaining vegetables around the plate. Sprinkle on the pepper and the cheese.



Serve at room temperature.

Additional Information

Fennel has a sweet mild licorice flavor. It is unique and delicious.
