Cayenne Chicken Stir fry

Ingredients

1 t Salt

1/2 t Cayenne pepper

1 1/2 lbs Chicken breast, cut into strips

2 T Olive oil

6 Cloves garlic
1 C Sliced green onions

2 1/2 C Snow pea pods, strings removed

4 C Veggies (red and green bell peppers, celery, broccoli, mushrooms, bok choy)

4 T Chicken broth

2 T Lemon zest

Directions

Toss chicken with salt and cayenne.



Heat oil on high, in a non-stick pan or wok.



Saute chicken until no longer pink, stirring often.



Remove chicken from pan



In same pan saute garlic and green onions for about 1 minutes.



Add snow pea pods, vegetables, and chicken broth.



Reduce heat to medium and cook for about 3 minutes, until vegetables are crisp-tender.



Return chicken to pan, add lemon zest and cook for 1 minute more.
