Lemon chicken stir fry

Ingredients

6 t Soy sauce

6 t Rice vinegar

4 Chicken breasts (cut into strips)

1 T oil

1/2 C Chicken broth

6 t Lemon juice

1 Packet equal or splenda sweetner

2 t Cornstarch

4 t Water

4 Green onions, sliced

Directions

Combine soy sauce and vinegar in a dish.



Mix well and add chicken, stirring to coat.



In a large pan or wok, heat oil.



Add chicken and stir fry for 4 - 5 minutes or until cooked through.



Transfer chicken to a warm plate.



Reduce heat to medium low and add stock, juice, and sweetneer to pan and stir well.



In a small bowl, blend corn starch with water until smooth.



Add to pan.



Bring to boil, stirring continuously.



Simmer for 1 minute.



Add chicken and spring onions and simmer for 5 minutes.

Additional Information

Even with the cornstarch this recipe only has 4 grams carbs per serving.
