Ingredients

3 egg whites (beaten stiff)
2 Tbls Splenda
2 tsp canola oil
1 tsp grated orange rind

Directions

Preheat the oven to 325 degrees. After beating eggs until stiff continue to beat in Splenda, oil and orange rind a little at a time. Drop by spoonfuls onto a lightly greased cookie sheet. Bake for 8-10 minutes, and remove from pan to a cooling rack right away.

Additional Information

This will make about 6 cookies. I always make them in small batches so they the egg whites stay stiff until baked. If the "cookies" are not removed from the pan they will continue to cook and become dry.
