Western Mountain Blueberry Custard

Ingredients

8 Eggs

1/2 t Salt

2/3 C Soy flour

1 C Fresh blueberries

1/4 C Splenda


2 1/2 C Heavy cream

1 t Vanilla

3 T Butter

Dash of nutmeg & splenda

Directions

Melt 3 T of butter in a large baking dish or 9 X 13" pan. Blend all ingredients except blueberries, in a blender.

Pour into preheated baking dish of melted butter and sprinkle with blueberries.

Bake at 425 degrees for 20 minutes to 25 minutes until puffed and golden.

Drizzle with warm sugar free maple syrup. Sprinkle with nutmet and splenda.
