Strawberry and Balsamic Ice Cream with Sweet Strawberry and Mint Salsa

Ingredients

ICE CREAM:

1 lb strawberries

2 fl oz balsamic vinegar

4 oz granulated Splenda

15 fl oz Heavy whipping cream

For the salsa:

9 oz strawberries

3/4 oz fresh mint

Directions

You will need a 2 lb loaf tin, 71/4 x 41/2 x 31/2 inches deep, lined with plastic wrap.



First of all, roughly chop 12 oz of the strawberries and place them in a bowl.



Sprinkle in the balsamic vinegar, stir well and leave them to marinate for about 30 minutes.



While that is happening, you need to make a syrup. To do this, place the granulated splenda and 2 fl oz of water in a small saucepan. Then put it on a gentle heat and allow the splenda to dissolve completely, stirring from time to time

Additional Information

The addition of balsamic vinegar to dairy products such as cream and ice cream tempers the richness and adds a subtle flavour.
