Italian Low Carb Manicotti

Ingredients

1 Jar Spaghetti sauce of your
choice or homemade sauce
3/4 lb Deli roast beef, thinly
sliced (about 12 slices)
1 lb Ricotta cheese
1 Egg
3 Cloves garlic, minced
1 Onion, chopped
1 T Italian seasoning
Salt, to taste
1/2 C Grated parmesean cheese
1 lb Shredded Mozzerella cheese

Directions

Spread 1/2 of the jar of sauce on bottom of an 9x13 baking dish.

In a large bowl, thoroughly combine ricotta cheese, egg, garlic, onion, seasoning, and Parmesan cheese.

Spoon equal amounts of cheese mixture on one end of each beef slice. Roll up beef slices jelly-roll style and arrange, seam-side down, in baking dish.(These will make two long rows of six in a 9x13" pan). You don't want long narrow beef rollups, you want shorter, fatter ones, so roll them accordingly. You might need to fold in one side of the beef slice to get a more narrow shape.

Pour remaining sauce over beef rolls. Bake uncovered, at 375
