Coconut Cream Ice Cream

Ingredients

2 1/4 cups Heavy Cream

1/3 cup Unweetened coconut flakes

4 T Splenda

1 Egg Yolk

1/8 t Coconut Extract

Directions

Heat cream, Splenda and coconut to simmering in medium saucepan; simmer 5 minutes. Cool to room temperature. Whisk about 1/4 cup hot cream mixture into the egg yolk; whisk yolk mixture back into cream mixture. Cook over medium heat 2 minutes, whisking constantly. Stir in coconut

extract. Cool to room temperature then freeze in ice cream maker according to manufacturer's directions.
