Sparkling Berry Sorbet

Ingredients

3/4 C Boiling water

1 4oz package Jell-O Sugar free Sparkling wild berry flavor gelatin

A few berries for garnish

A few mint leaves for garnish


1/2 C Splenda

2 C Cold, club soda or seltzer water

Directions

Stir boiling water into combined gelatin and splenda in a large bowl at least 2 minutes, until completely dissolved.



Stir in club soda or seltzer.



Pour into 9-inch square pan, cover.



Freeze about 1 1/2 hours or until ice crystals form 1 inch around the edges. Spoon into blender container; cover.



Blend on high speed 30 seconds or until smooth. Return to pan, cover.



Freeze 6 hours or overnight until firm. Scoop into dessert dishes and garnish with fresh berries and mint leaves.



Store leftovers in the freezer.
